Dorch fishes a medium-heavy bottom rig with a 4- to 8-ounce slip lead and 20-pound mono leader. Live bull minnows (killifish) will do the trick every time, he says.

Capt. Hoke Kennedy charters out of Panama City and trailers his boat to where the fish are biting. He says Apalachicola Bay and various rivers that feed it make for excellent speckled trout fishing from November and well through winter. The St. Marks River near Dog Island produces regular catches of 3- to 4-pound trout. "My best luck is with a 3/8- to 1/2-ounce jig-head with a chartreuse curly-tail grub, fished slowly across the bottom."

Allen Duke, who operates out of Port St. Joe, keeps the rods bent year-round with big-bull fights. Duke likes hot-pink plastic grubs for the 2 to 3 feet of water he normally fishes and keeps the grubs swimming fast - big trout and redfish can't resist them, he claims. John Wright at Gulf Breeze Bait and Tackle says productive, easy-to-locate spots include the Avocet Dredge and the Russian Freighter, about 12 and 8 miles offshore respectively. Ask Jackie Conzelman, the "bait man" who sells live cigar minnows and herring just outside St. Andrews Pass at Panama City. Conzelman, who usually uses a 12-foot net and mainly catches bait at night, recently caught more than he bargained for. "I made a cast and as soon as the net hit the water, I knew there was something in it other than bait," he says. "It started moving and I quickly tied the rope off on a cleat. There was a terrific thrashing and after a struggle, I finally got the big fish to the boat and realized it was a large shark. It took more time to untangle the critter and save my expensive custom net than it did to get it to the boat," he adds. Conzelman keeps his boat well lit, and a tourist in a nearby boat got the entire scene on video!

Seems he was fishing by himself near the entrance to Pensacola Bay when he was struck in the head by something with so much force that it knocked him unconscious.
